Formulation - quality and food safety nutrition - health

The current global context (global population growth, international trade development, new consumer expectations, etc.) places food, health and the environment at the heart of research needs in the coming years.

Controlling the quality of ingredients / foods is a societal issue, but is also a major concern for agro-food industries and public authorities. It passes by the guarantee of the authenticity - quality of the raw materials and the conditions of transformation and conservation.

Cluster 3 will develop research around three major themes:

  • The health benefits of protein hydrolysates and agro-food co-products
  • Characterization and control of microbial food and digestive ecosystems
  • The structure-function relationship at the service of the reasoned formulation of food and ingredients
